Why Whole 30?

Have you ever just felt like your life and energy level was stuck on E aka empty!? I recently read in my devotional on discipline...After reading this I had that "AH HAH" moment (and as a creative I get these ideas A LOT). I decided then and there I was going to make a change. I have been waking up going through the motions, over caffeinating and eating ALL the comfort food I can get my hands on...Can I get an Amen? Unfortunately I have never felt more bogged down tired and just plain exhausted. So my husband and I are taking on the whole 30 challenge to see if cutting out "the junk" can help us "reboot" no only physically but mentally.  This is challenging for me because SUGAR is a huge part of my lifestyle. When I announced this I got so many amazing recipes from you all that I can't wait to try so please feel free to send more my way! I have been experimenting in the kitchen so much already and this is completely new for me...I tend to start reading a recipe and then find myself going ROGUE adding a little of this and that, which might be ok if I was experienced in the kitchen. My husband is a rule follower and this drives him nuts. Last night we tried 2 new desserts, one was a concoction I made up and the other was a recipe (I am sharing both below).

         COPY CAT PUMPKIN RX BARS

The Link is below to the whole recipe that I used from Pinterest and I have to say they are really great snacks! I even had one for breakfast because I normally crave something sweet!

PUMPKIN BANANA BAKE
(WHOLE 30 APPROVED)
After we made the RX bars we had so much pumpkin left over. It  was from Fresh Market so the can was like $6 and would be unacceptable to waist. So  I popped the rest of the can of pumpkin into the blender added  1/2 cup of the chopped almonds,  3 Bananas, 1/4 cup of unsweetened almond milk, 2 teaspoons of pumpkin spice ( you can add more if you like), and 2 eggs. Once this blended evenly into a batter,  I poured the contents into a round 1.6 liter corning ware dish. Placed my creation into the oven on 350 degrees for 20 minutes (depending on your oven the time may vary).  Cut a slice and serve with drizzled almond butter. I have to say it is pretty awesome!
So if you are doing whole 30 this is an awesome way to get the most out of your already purchased ingredients. Two treats for the price of one ..you can't beat that!
